Cauliflower Fritter Sausage Stacks

Ingredients
1 cauliflower, large (about 6 cups riced cauliflower)
8 Jones Dairy Farm All Natural Golden Brown Turkey Sausage (2 boxes)
2/3 cup almond flour
1/2 cup parsley, chopped
3 eggs
1 1/2 teaspoon sea salt
Black pepper to taste
2-3 tablespoons avocado oil or sub grapeseed oil
1 avocado
2 tablespoons lemon juice
2 tablespoons water
1/4 teaspoon cumin
pinch of cayenne to taste, optional
Directions

1. Put rice cauliflower in food processor until coarsely chopped, slightly larger than typical cauliflower rice. Store bought riced cauliflower will work also. Add cauliflower to large microwavable bowl or dish. Microwave 4 minutes. Alternately, add to steamer and steam about 7 minutes on stovetop.

 

2. Add cooked riced cauliflower to large thin dish towel. Twist to squeeze excess water out of cauliflower. Add cauliflower, almond flour, parsley, egg, 1 1/4 tsp salt and pepper to bowl. Mix well to combine.

 

3. Add 1/2 tablespoon avocado oil to skillet over medium heat. Add sausage patties and 2 large mounds of cauliflower mixture. Use spatula to press down cauliflower into round patties. Cover skillet. Allow to cook until golden brown, about 5-7 minutes. Carefully flip cauliflower patties and sausages. Continue to cook uncovered for 4-5 minutes. Repeat until all cauliflower mixture and sausages are cooked.

 

4. Drizzle avocado sauce and chopped tomatoes, if desired. ( for the avocado sauce use avocado, lemon juice, water, 1/4 tsp sea salt, cumin, cayenne ).
